Ingredients

  • 14 oz bowtie pasta

  • 2 tablespoons olive oil

  • 1 medium red onion, thinly sliced

  • 4 cloves garlic, minced

  • 14 oz mushrooms, sliced

  • 5 cups baby spinach

  • 1/2 cup vegetable or chicken broth

  • 1 teaspoon dried thyme

  • 1/2 cup Parmigiano Reggiano cheese, freshly grated

  • 1/2 cup heavy cream

  • 1/2 teaspoon red pepper flake

  • Kosher salt and freshly ground black pepper, to taste

Directions

  • In a large pot of salted boiling water, cook the farfalle until al dente.
  • In a large skillet over medium heat, heat the olive oil. Add onion and sauté until starting to soften, about 2 minutes.
  • Add mushrooms and cook until browned, about 3 minutes more. Add garlic and cook for 30 seconds.
  • Stir in spinach and cook until wilted. Season with salt and pepper.
  • Stir in vegetable broth and cream and let simmer until the sauce reduces a bit, about 2 minutes.
  • Add Parmigiano Reggiano, pepper flakes, and thyme, and cook until the cheese has melted and the sauce has thickened to your liking.
